

Artichokes are a hardy, silver-leaved perennial that produces deep green, round flower buds—the edible part of the plant. Artichokes have thick green outer petals and tender, pale yellow inner ones. At the center lies the inedible fuzzy “choke,” beneath which is the prized heart and stem.
Easy to grow in sunny spots with well-drained, preferably sandy soil, they need plenty of space.
Artichokes can be boiled, steamed, sautéed, or fried whole when young in olive oil.
