🌱 How to Plant Rhubarb 'Ever Red'

When to plant:
Late autumn to early spring is ideal. Rhubarb loves a cold snap to get started!

Position:

  • Choose a sunny spot with well-drained, fertile soil.

  • Add compost or aged manure before planting for extra goodness.

Planting instructions:

  1. Dig a hole deep enough to cover the tuber with 2–3 cm of soil.

  2. Place the crown with the bud side facing up.

  3. Cover gently with soil and water in well.

🔔 Tip: Rhubarb is a perennial – plant it somewhere it can stay for years!

🌿 How to Grow & Care for Rhubarb

  • Watering: Keep soil moist, especially in dry weather. Avoid waterlogging.

  • Feeding: Apply a slow-release fertiliser in spring and again in summer.

  • Mulching: A layer of mulch keeps weeds away and retains moisture.

  • Harvesting:

    • Hold off harvesting in the first year to allow the plant to establish.

    • In year two, harvest lightly by twisting and pulling stalks (never cutting).

    • Always leave at least 2–3 stems on the plant to keep it healthy.

🚫 Don’t eat the leaves! Rhubarb leaves are toxic – only the stalks are edible.

🥧 Rhubarb & Apple Crumble Recipe

Ingredients:

  • 3–4 stalks of fresh rhubarb (or about 300g), chopped

  • 2 apples, peeled and sliced

  • ¼ cup brown sugar

  • ½ tsp cinnamon

  • 1 tsp vanilla essence

  • 1 tbsp plain flour

For the crumble topping:

  • ¾ cup plain flour

  • ½ cup rolled oats

  • ⅓ cup brown sugar

  • 100g cold butter, diced

Instructions:

  1. Preheat oven to 180°C (160°C fan-forced).

  2. In a bowl, combine rhubarb, apple, sugar, cinnamon, vanilla, and flour. Mix well and place in a baking dish.

  3. In another bowl, rub butter into the flour until it resembles breadcrumbs. Add oats and sugar and mix.

  4. Sprinkle the crumble topping over the fruit.

  5. Bake for 35–40 minutes or until golden and bubbling.

Serve with custard, cream or vanilla ice cream. Or all three – we’re not judging! 😋
